Gumbo z'herbes (Vegetarian)
Gumbo is an adaptable dish that can contain all different types of meat and vegetables or just vegetables. During the Catholic observance of Lent, or times when meat wasn't readily available or affordable, many families developed delicious gumbo recipes that were strictly vegetarian.
