Beignets covered in powdered sugar, 2023. Melissa Carrier, photographer.

Beignets are pockets of fried dough that are usually served covered with powdered sugar. Beignet is a French word that means bump. They’re probably called this because of how the dough puffs up when it is fried. Café du Monde, a popular spot to enjoy beignets and coffee in New Orleans, is open twenty-four hours a day, seven days a week!
